You won’t spend much time and effort to cook this simple and tasty salad. Ingredients for it are the following:
- 500g of new potatoes
- 4 preserved artichokes
- 3 tbs of grated parmesan
- 4 tbs of olive oil
- a small of flat-leaved parsley
- 1-2 tbs of lemon juice
- some mint (optional)
- black pepper to taste
First of all you need to boil or steam the potatoes in a casual way you used to. When they are ready take a bowl and mix grated parmesan, olive oil, lemon juice, and black pepper. Then cut potatoes into gig pieces (or just in half – as you like) and add artichokes sliced into pieces with roughly chopped parsley and mint. Toss it all and you’ll get two serves of tasty, healthy, and nutritious meal.
