Vegetarian Stuffed Peppers

stuffedpeppers-main_fullStuffed peppers is a sort of food that is loved not only by vegetarians, but also by thousands of people with ‘traditional food orientation’. To make the cooking more convenient you should better take large peppers. Ideally they all should be of the same size in order not to make someone feel out of his share.

Ingredients for 4 servings:

  • 4 large sweet bell red peppers or 8 smaller ones
  • 1 cup rice
  • 1 sliced onion
  • 1 teaspoon summer savory
  • 1/2 cup grated carrots
  • 1/4 cup thinly sliced celery
  • 1 cup water
  • 3 tablespoons olive oil
  • several bay leafs
  • 1 tablespoon chopped parsley
  • 1/2 cup tomato sauce

First of all we cook the stuffing. In a large skillet we saute the onions, carrot and celery. After that add bay leaf, summer savory, and rice, and keep cooking till the rice is almost transparent. Then add 1/2 cup water and tomato sauce, keep cooking till the rice absorbs all the liquid. When it’s done bay leafs should be removed. The stuffing is ready! Fill in the peppers, and put them into a baking pan with 1/2 cup of water in it. Cook it at a low heat till the rice is cooked. Before serving don’t forget to pour peppers with parsley.
