Muffin is a type of dessert that is mostly served hot for breakfast. But it doesn’t mean that you can’t have a couple of them for lunch. To make 20 muffins you will need:
- 250 g butter
- 220 g caster sugar
- 4 eggs
- 750 g self raising flour
- 375 ml soured cream
- 500 ml cooked carrot puree
- 60 g chopped nuts (if desired)
You will also need orange rind and vanilla. These two ingredients will give your muffins incredible and at the same time gentle smell. Mix them with butter and sugar to get a fluffy mass. Continue mixing and simultaneously add the eggs, the flour, soured cream, and carrot puree. Spoon the mixture into greased muffin tins, and sprinkle with nuts. Bake them at 350F for about 25 minutes. When they are ready they turn a golden color.
