Tomato Rice

tomato riceThis is one more recipe for vegetarians who like rice and Indian food traditions.

  • 1 cup Basmati Rice
  • 3 small tomatoes (chopped)
  • 1 medium onion (chopped)
  • 2 green chilies sliced (Jalapeno/Serrano)
  • 1 clove fresh garlic
  • 1-inch piece fresh ginger peeled and chopped
  • 2 tsps Pulav masala powder (optional)
  • 1 tblsp oil
  • 2 tsps salt
  • 2 cups water

Variations of this recipe may include 1/2 cup of fresh or frozen green peas and/or 1 small potato, peeled and cubed can be added along with the tomatoes for color , texture and improved taste.

We don’t start with the rice. First of all we fry garlic. In a big pan with preheated oil we fry grinded garlic together with ginger. Then we add the sliced chili and then the chopped onion and fry till the onion gets sweaty and light brown in color. Add the chopped tomatoes and fry till the tomatoes get fried. Then we add the Basmati Rice and water. Cook till the water is vanished.

Recommended to serve wit Raita.
