Tofu, Cashews, and Vegetables – Cook Fast, Serve Immediately

tofu cashews and vegetablesTofu and vegetables are among the most favorite and widely used ingredients for vegetarian meals. Today we would like to offer you a Chinese meal that includes these ingredients and requires only about 30 minutes for preparation.
For this you will need:

  • 1 tbsp light soy sauce
  • 1 tbsp water
  • 1/2 tbsp cornstarch
  • 2 tbsps honey
  • 1 tbsp hot bean sauce
  • 2 tbsps sweet bean sauce
  • 3 tbsp peanut oil
  • 1 carrot — in 1/2″ cubes
  • 1 zucchini — in 1/2″ cubes
  • 2 1/2 ounces bamboo shoots – in 1/2″ cubes
  • 8 ounces tofu — in 1/2″ cubes
  • 1/2 cup frozen green peas
  • 1/2 cup roasted unsalted cashews

Take a small bowl to mix the ingredients for the sauce in it (soy sauce, water, honey, cornstarch, and sweet bean sauce); stir them well and put aside for a while.

Before you start making the sauce you can put a wok over medium-high heat. This will save you some time. And it’ll begin smoking just when the sauce is ready. So, when it starts smoking add the peanut oil and the carrot. Fry it for about 30 seconds and don’t forget to stir it all the time. Then come zucchini, bamboo shoots, tofu, and peas. Then fry and stir again. In 30 seconds add cashews and the sauce, and stir it all well for about a minute or a bit more. When it becomes thick it’s ready to serve. You’ll get 4 servings.
