What could be better for keeping yourself in a good physical condition than regular eating of healthy low-calorie vegetable salads? It was a rhetorical question. To make your daily food allowance more variable try out this coleslaw salad.
Ingredients:
- 2 cups red carrots shredded
- 1 large apple
- 1/2 red or sweet onion
- 1 cup raisins
- 1 cup pecans
- 4 tbsp vegenaise or nayonaise
- 1/2 tsp sea salt
- 1/8 tsp cayenne (optional)
To make sure that you are eating a healthy food please find out whether these vegetables are organic.
Shred the cleaned fruits and vegetables and place them in a large bowl. It’s better and more convenient to use a food processor with a shredder attachment. In the food processor (with a normal chopping attachment) or in a blender (use a small jar that the blender attachment fits into) chop the raisins and pecans together. The pecans will help prevent the raisins from clumping up. If you don’t have one or get some troubles with it then don’t worry, you can always do your shredding and chopping manually. Add the Vegenaise (or other vegan mayonaise) and seasoning. Mix well. Enjoy!
