Being a vegetarian is not something extraordinary today. More and more people join the circle of vegetarians everyday. For most of them it’s a natural process, and they neither make any announcements about it, nor agitate their friends, relatives, and random strangers to become vegetarians. They simply follow general or their own vegetarian rules and feel happy and comfortable about this.

But there is also a certain per cent of people who can be called ‘active vegetarians’. They behave totally different. First of all these active vegetarians strictly follow the rules of veganism, i.e. they do not eat meat, poultry, fish, eggs, and dairy products. But that’s not all, and possibly only a part of the deal for them. They are proud of being vegetarians, and actively agitate as many people as they can to join them. For people who do not share such beliefs it may seem a bit strange. But one thing is pretty obvious and clear: there is absolutely nothing bad about this. If take a look at this from another point of view there is really something to be proud of because being a vegetarian is not that easy, and so many people can’t make it and give it up. So, vegetarians, be proud of yourself!

This time let’s step aside from vegetarian recipes for a while and think about veganism in general.

There is a common opinion that people who don’t eat meat… they are called vegetarian… do this because they think and care about animals. They consider killing and eating any of them as something cruel and something that does not belong to a human being. Those who don’t understand and don’t support such point of view call it ridiculous because Mother Nature created us in such a way that we are supposed to eat meat.

Have you noticed that veganism has become more popular with wide appearance of meat and dairy products substitutes? Indeed thanks to modern technologies people have a wide choice of vegetarian products today. Of course it has a great influence on the number of vegetarians increase. And we shouldn’t forget about the freedom of speech. You may wonder what it has in common with our subject. Well, think of those thousands of people who are not shamed to wear a costume of some animal (pig and chicken costumes are the most popular once) and ask passing people not to eat ‘them’ because they also want to live. And they do this not for money, but for all animals that inhabit our planet.

vegetarian recipes can be found in any cookery. The main thing that all of them have in common is that they completely exclude using meat, poultry, and fish. Most of ingredients are fruits and vegetables. Many vegetarian foods can also contain eggs, honey, and dairy products.

The variety of fruits and vegetables that are used in vegetarian recipes is so huge that it’s hard to believe in. Some of them are common for many countries all around the world; some are cultivated in specific countries, zones, areas. This fact has a great influence on what ingredients vegetarians in different countries combine their foods from.
What also have a great influence on the specifics of vegetarian recipes are varieties of vegetarianism.

As has been mentioned above some vegetarians include eggs, dairy, and honey in their meals. They refer to lacto-ovo vegetarianism. Meals from this diet are so tasty that one can even not notice the absence of meat.

This type of vegetarianism has two derivatives: lacto vegetarianism (does not allow eating eggs) and ovo vegetarianism (does not allow eating dairy). And there is one more type of vegetarianism – veganism. It is the strictest one because it doesn’t allow eating meat, poultry, fish, eggs, dairy, and honey as well. But it doesn’t make the food less nutritious and tasty.
