What does it mean to be a vegetarian? Everyone knows that there are several varieties/types (they are also called diets) of vegetarianism, actually there are four of them. The only thing that they all have in common is that none of them allows eating meat, poultry, and fish. So, people who eat fish or poultry can not be considered as vegetarians, they can only be considered as people who just don’t eat meat for some reason.

The simplest and the freest from of vegetarianism is lacto-ovo vegetarianism which allows eating eggs, dairy, and honey. And for the people who are only at the beginning of their vegetarian life it is highly recommended to start with this from: it would be easier and make the process more natural and not that stressful for the body.

Truly vegetarians believe that people shouldn’t eat even eggs, dairy, and honey because these are products of animal vital functions. Of course honey is under a big question here because bees are not animals, and they produce honey which is derived from nectar of flowers. So, what could be more vegetarian? Anyway being a vegetarian is not a non-sense today, and this outlook is really worth thorough consideration.

Today we’d like to offer a recipe of Irish colcannon for those who consider themselves lacto-ovo vegetarians or just want to try some tasty meal with milk and eggs, and without meat. According to Collins dictionary colcannon is a dish, originating in Ireland, of potatoes and cabbage or other greens boiled and mashed together. Our recipe does not include potatoes.

Ingredients for Irish colcannon:

1 bag frozen hash browns with peppers

1 medium onion

1 C milk

1 large bunch of fresh kale

nutmeg

6 eggs

1 C. shredded cheddar

olive oil

salt and pepper to taste

Before you start preheat the oven to 375F. Clean the kale and chop the onion. Fry the onion fry in small amount olive oil until brown. Then add kale and keep frying for a while. Add salt and pepper to taste, and 1 tsp nutmeg.

Remove from heat. Spread frozen Hash browns in bottom of sprayed casserole. Add milk. Top with kale and onion mixture. Make 6 ‘wells’. Break an egg into each well. Top casserole with shredded cheddar cheese. Bake until eggs are set. Time varies by oven, usually 35-40 minutes.
