Carrot is well known for its vitamin A and other numerous useful characteristics. Eating carrot alone is not really interesting. Let’s make a spicy carrot salad.
Ingredients:
- 2 teaspoons ground flax seeds
- 2 tablespoons hot water
- 1/4 cup orange juice
- 2 tablespoons fruit vinegar (apple cider or white wine vinegar will do too)
- 1/2 teaspoon spicy Spanish paprika (or 1/4 teas. paprika plus 1/4 tsp. cayenne)
- 1/4 teaspoon cumin
- 4 cups grated carrots (about 4 large carrots)
- 4 clementines (small seedless oranges), peeled and sectioned
- 2 tablespoons walnuts (optional)
These ingredients will be enough to make 4 servings.
Take a small bowl with the hot water and add there the ground flax seeds. Stir it well and let it get thickened. After that add orange juice, vinegar, paprika, and cumin.
Grate the carrots. Use small or big grater as you wish. Add them to the rest of the ingredients and immediately add the dressing and mix well. Fold in the clementine sections and sprinkle with walnuts. Better to serve cold.
