For this meal you will need:
- 4 large baking potatoes (one potato for one serving)
- 1/4 cup of vegan cheese
- 1 tbsp of olive oil
- 1 big onion, chopped
- 8 oz of mushrooms, sliced
- Salt and pepper to taste
First of all you need to boil or steam the potatoes in a casual way you used to. When they are ready and cooled make big holes in them. Make a mash from the scooped-out parts, and mix with the cream cheese. Fry the onion and the mushrooms on the olive oil. Take a bowl and mix properly mash+cheese with onion+mushrooms. Add some salt and pepper to taste. The filling is ready. Stuff the potatoes, heat them in oven, and serve.
