Potato Kababs With Avocado Nuggets Stuffings


Avocado may seem like a boring fruit however it is one fruit that is used widely in creating and cooking delicious yet healthy recipes. One recipe that uses avocado is the potato kababs stuffed with avocadoes. This unique healthy recipe will surely wow everyone in your home.

For this recipe, here are the ingredients that you will be needing:

  • 6 pieces of Medium potatoes
  • ½ Cup of walnut pieces
  • ½ Cup of mint
  • ½ cup of cilantro or coriander leaves
  • 1 Jalapeno or two Green chillies, ribs and seeds removed properly
  • ½ Teaspoon of salt or add to taste
  • ½ Teaspoon of garam masala
  • 1/8 Teaspoon of  Ground pepper
  • 1/8 Teaspoon of cinnamon
  • 1/8 Teaspoon of fennel or sonf
  • 1/8 Teaspoon of  cayenne or red chilli powder
  • 1 Tablespoon of cornflour 
  • 1 piece of Small avocado
  • Canola or vegetable oil (used for shallow frying)

Once you have prepared the necessary ingredients, the next thing that you should do is to start preparing the dish. This can be done by following the simple steps given below:

Place three cups of water together with the potatoes in your pressure cooker. Boil potatoes until it becomes tender. Drain water then remove the peel of the potatoes.

Mince the walnuts, coriander or cilantro leaves as well as chillies properly.

Place all potatoes in a plate. Using your fork, mash the potatoes into a very smooth paste. Make sure there will be no lumps formed. Add in the following ingredients: salt, mint, cilantro, walnuts, chili, cornflour and spices. Ensure that the ingredients are thoroughly mixed.

Slice your avocadoes into half inch pieces. Get a bit of the potato mixture and roll this into a bowl. Using your finger, create a deep indentation on the potato ball. Put a chunk of avocado inside it. Roll the potato mixture to seal the avocado. Roll the ball smooth. Slightly flatten the ball and place it in a plate. Do this for the remaining potato mixture.

Place a bit of canola oil in a skillet. Warm the skillet. Place some of the patties in the hot oil. Continue cooking the patties over medium heat. Cook until the bottom part becomes slightly brown. Turn the patties over to cook the other side. Add more tablespoon of canola oil around the patty. This will help ensure crisp crust of the patties. Remove patties from the skillet and place it on a plate. Serve this with mango chutney.

Tips and Tricks:

In the event that you do not have any pressure cooker, you can always cook your potatoes in an oven or a microwave. You can also try peeling and cutting potatoes into cubes. Cook in salted water until it becomes tender. Drain the potatoes well before proceeding on the other steps.
