Here is a simple vegetarian recipe for a delicious pina colada smoothie. Drink it for breakfast or add rum and enjoy it at a New Year party.
Ingredients:
- 1 c. pineapple, frozen
- 1/2 c. coconut water or 1/4 c. coconut milk
- 3 ice cubes
- 1 tsp. vanilla extract
- 1/2 banana, frozen
- 1 c. milk or soymilk
- 1/2 c. yogurt or soy yogurt (optional)
Blend all ingredients together in a blender.
To make your smoothie sweeter, add 3 dried whole pitted dates.
If you want, use ice cubes made out of vanilla rooibos tea instead of ones made from just water.
Add more coconut if you wish. Coconut contains saturated fat so I was conservative on the quantity of coconut in the recipe. Young coconuts contain less fat and calories than mature coconuts.
Great recipe. I add spinach in mine to make it a green pina colada smoothie, to make it even more nutritious!
