Mandarin Orange Salad

mandarin orange saladFruit vegetarian salads are excellent for a light dinner or for a tasty and useful snack. Those ones that contain citrus are not only tasty and refreshing, but they also charge you with energy. Try out this one.


  • 1 large bag of romaine lettuce or spinach greens
  • 1 can Mandarin oranges in juice not syrup, 11 ounces, chilled
  • ¼ pound fresh mushrooms, cleaned and sliced thin
  • ½ cup slivered almonds
  • salad dressing to taste

A great advantage of fruit and raw vegetable salads is that you don’t have to fry or boil anything. This saves you a lot of time, and keeps all the vitamins and minerals inside the salad.

In this recipe the only ingredient you have to toast is 1/2 cup of slivered almonds. Spread them on a cookie sheet and place in a 350 degree oven for about 10 minutes. Don’t forget to stir them and watch all the time since they burn easily. When they are done (or when you think they are done) give them 5 minutes to cool down, and then you can safely taste them to check this.

After that combine all the ingredients, toss with dressing and enjoy!
