Indian national vegetarian cookery requires some deeper knowledges in using fruits, vegetables, herbs, and spices. Ingredients for mango rice are divided into three different groups and require some very specific components. If you don’t have them at hand – don’t worry, you can replace them with anything you like.
Ingredients for rice:
- 1.5 cup long grained rice
- 1.5 cups grated raw mango
- 4 tbsp peanuts
- salt to taste
Ingredients for masala:
- 1.5 tsp mustard seeds
- 1/2 tsp asafoetida powder
- 4 red chillies
- 1 green chilly
- 1/2 tsp turmeric powder
- 1/2 cup grated coconut
Ingredients for seasoning and garnish:
- 3 tbsp oil
- 1 tsp mustard seeds
- 1 tsp urad dhal
- 1 tsp channa dhal
- 1 red chilli
- a few curry leaves
- 1 tbsp finely chopped coriander leaves
Start with rice: cook it in a casual way and leave for getting cold. Then take a half of mango and all the ingredients for masala, and grind them to get a paste. Heat a pan with oil. After that combine the ingredients for seasoning with the peanuts and bake it till the peanuts turn golden. Then add another half of mango, and cook for a couple of minutes. Then add masala, and keep cooking for a while. Take the rice and slowly mix it with masala, and garnish it with coriander leaves. Enjoy your meal!
