Hot Fruit Salad

hot fruit saladTo make this tasty vegetarian hot fruit salad you will need only 20 minutes (15 for preparation + 5 for cooking) and the following ingredients:

  • 1 (8 oz.) can mandarin oranges
  • 1 (8 oz.) can pineapple chunks
  • 1 (8 oz.) can peaches
  • 2 ripe bananas, peeled and quartered
  • 2 Tbsp. brown sugar
  • 1/2 tsp. ground cinnamon

You might be surprised, but this salad is served hot. It’s an excellent addition to rice dishes when fresh fruit is out of season.

Drain the oranges, pineapple, and peaches, reserving 1/2 cup of syrup. Set aside. Mix the oranges, pineapple, peaches, and bananas in a 3-quart saucepan. Sprinkle the brown sugar, cinnamon, and the reserved syrup on top and heat it for 5 to 7 minutes.

You can also cook this salad in your microwave.
