Homemade Granola

homemade granolaIt’s an excellent dish for a healthy vegetarian breakfast.


  • 1/2 cup apple juice concentrate
  • 1/2 cup almond butter or tahini
  • 1/2 cup maple syrup
  • 1 tsp vanilla or almond extract
  • 8 cups rolled oats
  • 1 cup chopped almonds or sunflower seeds
  • 1 cup raisins, currants or chopped dates

Combine apple juice, almond butter, maple syrup and vanilla in bowl or blender, and mix well. Combine oats and almonds in large roasting pan and coat with liquid mixture. Bake in 350 F oven until golden brown (30 mins.) stirring every 10 minutes. Cool, stir in fruit and store in air tight containers.

The only thing you have to do in the morning is to take it out from your fridge and enjoy!
