Kugel is the Yiddish word for pudding. So, today we are cooking Yiddish fruit pudding. It’s a great vegetarian dessert which is naturally sweet thanks to fruit contained in it. Makes about 8 servings.
Ingredients:
- one 12- to 16-ounce package of eggless flat noodles or fettuccine-type pasta
- 2 large cooking apples (Macintosh, Granny Smith, Empire, Rome, or other semi-tart variety.)
- 2 large ripe pears, any variety
- 1/2 cup raisins, any color
- 3 large bananas, at very ripe stage
- 1 teaspoon ground cinnamon
- small amount of oil or melted vegan margarine for pan
- 1 teaspoon vegan margarine, optional
Cook noodles in boiling unsalted water until they are cooked so as to be firm when eaten. Drain them and set aside. Preheat the oven to 350 deg F. Mix chopped apples and pears with raisins in a bowl. In another bowl mix mashed bananas with the noodles and cinnamon. Spread one-third of the noodle and banana mixture into the pan. Place one-third of the fruit mixture on top of the noodles. Repeat this layering process two more times until all ingredients are used up. Top it with margarine and bake for about 45 minutes.
