Cashews are excellent for serving with rice. Curried cashews are even better. To make them take the following ingredients:
- 1 small onion
- 1 clove garlic
- 1 small piece fresh ginger
- 1 fresh chili
- 1 t turmeric
- 1 cinnamon stick
- 2 cardamom pods
- grated rind of 1/2 lemon
- sea salt
- 200 ml / 3/4 cup / 6.8 fl oz water
- 285 g / 2 cups / 10 oz whole cashews
- 30 g / 2 T / 1 oz creamed coconut
The method is absolutely simple. Though, it requires about 40-45 minutes in the whole.
Chop the onion and chili finely. Make sure that there are no chili seeds left. Crush the garlic and grate the ginger. Put together all the ingredients (except cashews and coconut) including all the spices in saucepan with water. Simmer it for several minutes. After that add the cashews and creamed coconut and simmer for 20-30 minutes more.
