‘Chicken’ Stuffed Baked Potato

Stuffed Baked PotatoIf you want to make a healthy vegetarian lunch for your family why don’t you cook ‘chicken’ stuffed baked potato? Make sure you’ve got everything at hand. Take these:

  • 4 large baking potatoes (one potato for one serving)
  • 4 tsp. margarine
  • 4 tbsp. taco seasoning (you can replace it with any other you like and think it’ll taste good in this dish)
  • 1 tbsp. olive oil
  • 1 bell pepper, chopped
  • 1/2 cup chopped white onion
  • 2 cups chopped vegan chicken
  • 4-oz. can diced green chilies
  • 1 cup salsa

While you make preparations preheat the oven to 375F. At the meantime make holes in the potatoes; coat it with margarine (1 tsp for every potato), and spatter them with the seasoning. Put them in warmed-up oven for 35-45 minutes. Please, don’t forget to use foil in advance. So, now you have about half an hour to warm-up the olive oil in a pan and fry onion with bell pepper for a while. Then add the rest of ingredients (i.e. vegan chicken, green chilies, and salsa) to them and cook properly. When the filling is ready stuff the potatoes and serve.
